In no particular order, these are my favorite places.
Cafe Guayasamin- This coffee shop is great for working, not to mention, the coffee is amazing! There are many tables, plugs, and space to sprawl out. The coffee shop is normally pretty quiet which makes it great for getting work done. The wifi has always worked really well for me!
Fankor- So recently, I think they started cracking down on people who come with their laptops- I saw that they put something on their menu now. If the coffeeshop is crowded and you have been there working for a while, they have the right to give your table to someone else. While they say this, I have never had this problem. But as a rule of thumb and curtesy, it is always nice to buy something extra other than a coffee if you are planning to be in the coffee shop for a while. Fankor has great food and drink options. Their prices are a little higher than other coffee shops, but the esthetic is amazing!! The wifi is great and you can normally find a table with plugs-specially if you sit in the front by the window facing outside.
Palatu- I think this is my favorite place to get coffee in all of Quito. They have the best dirty chai latte that I've tried in Quito. They also have plugs, great wifi, and a great ambience to work in. There are booths, bar stools, and regular chairs to pick from. So have your pick at where you want to sit.
Velez-This coffee shop is located in La Floresta and is probably right behind Palatu or maybe tied for first place as my favorite coffee shop. The people who work here are extremely friendly and a lot of people who come in seem to be locals who always go there. Their wifi is good, but finding plugs might be a little hard. You just have to be strategic with where you sit in order to get a charge for your computer. They have seating inside and outside. I always work better inside, so I normally work inside if I work there. There is a small deck out front that I sometimes see people working on their computers, but I would be cautious working on my laptop right off the sidewalk. It is always good to be a little overly cautious when taking your laptop out on the streets. Anywho, their coffee and pastries are amazing and there is a great energy in this place from the people working there.
Datu Deli (Traviesa Cafe)- This place is located inside a place called Datu Deli. There is one in Quito and one in Cumbaya. The one is Quito is fairly new but I went once, and it seems like a great place to bring your laptop and work. The place seems very secure, there is a guard outside, and you have to climb up some stairs to get to the area where you would work. There is a lot of natural light coming in from the big windows and their wifi works well! Traviesa has some of the best coffee in Quito as well!!
Disclaimer: I have to say this otherwise you might hurt me lol. There always is the risk that you could get your things stolen when you bring them on the street or in a coffee shop. Just because you are in a coffee shop does not mean that your belongings are safe. Also when you go to the bathroom, I would recommend bringing your things with you.
